Hello!
Since I don't have a lot to write about, I will put some recipes on my blog that we really like!!
Homemade Twix Bars:
1 pkg. Club crackers
1/2 c. Butter
1 c. Graham cracker crumbs
3/4 c. Brown sugar, packed
1/2 c. Sugar
1/3 c. Milk
1 c. Chocolate chips
3/4 c. creamy peanut butter
Line a 9"by13" pan with one layer of Club crackers, unbroken. Boil butter, graham cracker crumbs, sugars and milk for five minutes; carefully pour over Club crackers. Add another layer of crackers. Melt chocolate chips and peanut butter. Spread carefully over crackers and cool.
We used butterscotch chips one time and it was fantastic!!!
Amaretto Cream Truffles:
5 oz. semisweet chocolate chips.
4 oz. milk chocolate chips
1/3 cup heavy whipping cream
2 Tbsp. Amaretto (optional)
1 tsp. vanilla
2 Tbsp. sugar
2 Tbsp. baking cocoa
Assorted sprinkles,optional.
1.Place chocolates in a small bowl.In a small saucepan, bring cream just to a boil.Pour over chocolates;whisk until smooth. Stir in Amaretto(opt)and vanilla. Cool to room temperature, stirring occasionally. cover and refrigera for 11/2 hours or until easy to handle. 2. In a small bowl, combine sugar and cocoa. Shape chocolate mixture into 1-in. balls; roll in cocoa mixture or, if desired, assorted sprinkles. Store in an airtight container in the refrigerator. That is if you do not eat them all first!!!! We did not roll very many in cocoa powder, we rolled them in white sugar, but you can roll them in nuts or any thing you like!!!!
Pumpkin Bars:
4 Eggs
2 c. Sugar
2 c. Pumpkin
3/4 c. Butter, melted
2 c. Flour
2 tsp. Baking powder
1 tsp. Baking soda
1/2 tsp. Cinnamon
1 c. Nuts (optional)
1 (8-oz.) pkg. Cream cheese
3/4 Stick butter
3 c. Powder sugar
1 tsp. vanilla
1 T. Milk
Cream together the eggs, sugar, pumpkin, and melted butter. Add the flour, baking powder, baking soda, cinnamon, and nuts. Bake at 350 for 25 minutes in a 10"by15" jelly roll pan. Frost when cool. Frosting: beat together cream cheese, 3/4 stick butter, powder sugar, vanilla milk. I used a 9" by 13" pan and baked it for longer. It is fabulous!!!!
