Wonderful Recipes!!

Hello!
Since I don't have a lot to write about,  I will put some recipes on my blog that we really like!!

Homemade Twix Bars:
1 pkg. Club crackers
1/2 c. Butter
1 c. Graham cracker crumbs
3/4 c. Brown sugar, packed
1/2 c. Sugar
1/3 c. Milk
1 c. Chocolate chips
3/4 c. creamy peanut butter


Line a 9"by13" pan with one layer of Club crackers, unbroken. Boil butter,graham cracker crumbs, sugars and milk for five minutes; carefully pour over Club crackers. Add another layer of crackers. Melt chocolate chips and peanut butter. Spread carefully over crackers and cool.
We used butterscotch chips one time and it was fantastic!!!


Amaretto Cream Truffles:
5 oz. semisweet chocolate chips.
4 oz. milk chocolate chips
1/3 cup heavy whipping cream
2 Tbsp. Amaretto (optional)
1 tsp. vanilla
2 Tbsp. sugar
2 Tbsp. baking cocoa
Assorted sprinkles,optional.


1.Place chocolates in a small bowl.In a small saucepan, bring cream just to a boil.Pour over chocolates;whisk until smooth. Stir in Amaretto(opt)and vanilla. Cool to room temperature, stirring occasionally. cover and refrigera for 11/2 hours or until easy to handle. 2. In a small bowl, combine sugar and cocoa. Shape chocolate mixture into 1-in. balls; roll in cocoa mixture or, if desired, assorted sprinkles. Store in an airtight container in the refrigerator. That is if you do not eat them all first!!!! We did not roll very many in cocoa powder, we rolled them in white sugar, but you can roll them in nuts or any thing you like!!!!

Pumpkin Bars:
4 Eggs
2 c. Sugar
2 c. Pumpkin
3/4 c. Butter, melted
2 c. Flour
2 tsp. Baking powder
1 tsp. Baking soda
1/2 tsp. Cinnamon
1 c. Nuts (optional)
1 (8-oz.) pkg. Cream cheese
3/4 Stick butter
3 c. Powder sugar
1 tsp. vanilla
1 T. Milk


Cream together the eggs, sugar, pumpkin, and melted butter. Add the flour, baking powder, baking soda,cinnamon, and nuts. Bake at 350 for 25 minutes in a 10"by15" jelly roll pan. Frost when cool. Frosting: beat together cream cheese, 3/4 stick butter, powder sugar, vanilla milk. I used a 9" by 13"  pan and baked it for longer. It is fabulous!!!!

Different ways to cook oats!



I thought I would post about our favorite ways to eat oats around here.                 




Crock pot apple oatmeal
4 c. Milk                            
1/2 c. Brown Sugar    
2 T. Melted Butter                   
1/2 tsp. Salt
1 tsp. cinnamon
2 c. Oats (not quick oats)
2 c. Apples, peeled and chopped
1 c. Dates or Raisins (optional)


Butter crock pot with approx. 1/4 c. butter.(Be sure to butter well or you will
have a really hard time getting it clean!)
Combine all ingredients and mix well.Cook on low overnight or for 8-9 hours.
Serve with lots of butter! And brown sugar to your liking.Even though it has
brown sugar in it we always add a little extra!
     We double it to feed our family, and I sprinkle a little cinnamon on
top before I cover it for the night.




Oatmeal Crisp
1/2 c. Melted Butter
2/3 c. Brown sugar
3 c. Old Fashioned Rolled Oats
Fruit-Apples or fruit of you choice


 Put melted butter in a bowl, Add brown sugar and old- fashioned
rolled oats.cover the bottom of a 9 by 13 pan with fruit (we use apples)
pour the oatmeal mixture on top and bake at 350 for about 20-25 minutes.
 Serve warm.Wonderful!




Peanut Butter Granola
6 T.Oil (We use butter)
1 c. Peanut Butter
71/2 c. Oats
11/2 c. Brown Sugar


 Melt peanut butter and oil together.Add sugar. Pour over oats.
Mix well. Bake at 300 for 15-20 minutes.
Serve warm or let cool. Fantastic both ways!
(Delicious on vanilla yogurt!)




Baked Oatmeal
3 c. Rolled Oats
1 c. Brown Sugar
2 tsp. Cinnamon
2 tsp. Baking Powder
1 tsp. Salt
1 c. Milk
2 Eggs
1/2 c. Butter
2 tsp. Vanilla
3/4 c.Dried Fruit (opt)


We do not use the dried fruit.


Preheat oven to 375.Mix together oats,sugar,cinnamon,
baking powder,and salt. Beat in milk, eggs, butter, and vanilla.
Stir in fruit.(Opt).
Spread in 9 by 13 baking dish. Bake 40 minutes.


Here are a few toppings we like to put on our regular oats.
 
Peanut butter and butter.
Nuts/vanilla and butter.
Apple/cinnamon,and butter.
Flax seed/apple, and butter.
